Cucumber, Tomato,
and Onion Salad

Acute phase recipe from Medi-Weightloss Clinics®

A crisp vegetable salad suitable for the acute phase of our healthy weight loss program.

Ingredients

  • 5 fresh Italian or plum tomatoes
  • 1/4 average red onion, sliced thin
  • 1 fresh medium-sized Cucumber
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp red wine vinegar

Directions

  1. In a bowl, mix the tomatoes, onions, and cucumber with the olive oil and red wine vinegar.
  2. Add salt and pepper to taste.
  3. Let stand for approximately 15 minutes. Toss again and serve.

Tip: You may serve this crisp salad chilled as well.
