Candy Cane Brownies

Ingredients

  • 4 Tbsp coconut flour
  • ¼ cup unsweetened cocoa powder
  • ½ cup Splenda®
  • ¼ tsp salt
  • ½ tsp baking soda
  • ¼ cup Libby's® Pure Pumpkin
  • 5 Tbsp egg whites
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • ¼ cup water
  • 4 piece(s), crushed sugar-free peppermint candy
  • 3 Scoop Medi-Weightloss Chocolate Premium Protein Shake

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine dry ingredients and set aside. In a separate bowl, whisk egg whites, pumpkin, extracts, and water.
  3. Add egg white mixture to dry ingredients and mix. Be careful not to overmix.
  4. Coat a 7x10 baking pan with cooking spray and pour in brownie batter.
  5. Bake 15 minutes. Remove from oven and top with crushed peppermints. Return to oven for 2 minutes.
  6. Let cool, slice, and serve.
