Lemon Achiote Grilled Tofu

Preparation

Ingredients

  • ¼ tsp cayenne pepper
  • 1½ tsp Splenda®
  • 3 clovess raw garlic
  • ½ tsp Lawrys® seasoned salt
  • ¼ cup fresh squeezed lemon juice
  • 12 oz raw firm tofu
  • 2 Tbsp Achiote powder

Directions

Directions for marinade

  1. Whisk Achiote powder, cayenne pepper and Splenda® in a small bowl.
  2. Sprinkle salt over the garlic cloves and smash them with knife then mince into a paste.
  3. Add garlic paste and lemon juice to the Achiote mixture and whisk until combined.

Directions for marinating the tofu

  1. Cut the extra firm tofu into 4 equal slabs (about 3oz each).
  2. Place tofu into an 8x8 baking dish and pour the Achiote marinade onto the tofu. Flip each piece to ensure all sides are thoroughly coated. (you may rub into tofu lightly)
  3. Place the tofu in the refrigerator for at least one hour, flipping the pieces halfway through.

Directions for grilling the tofu

  1. Place the tofu on a medium hot grill, brushing the top of each piece with some of the leftover achiote marinade.
  2. Grill until the tofu is golden on the bottom with nice grill marks (rotate the tofu 90 degrees halfway through the grilling of each side to get good grill marks).
  3. Flip tofu, brushing the side facing up with more leftover marinade. Cook until the bottom is golden as well.

Additional Notes

This tofu recipe is excellent alone, over a salad or crumbled into an egg scramble or frittata!

Achiote powder, made from Annatto seeds, is a deep red colored spice typically used in Latin American cuisine. It has a very rich flavor similar to that of a chili pepper, but without the heat. It can be found in Latin American grocers as well as some specialty grocery stores.
